The Fajitas: I'd love to say that my own creation turned out perfectly, but honestly, while it was a good start and still a very filling dinner that tasted more decadent than it actually was calorie-wise, it needed more of something. You can find many really excellent recipes for fajitas at this link, but if you are simply dying to know what I did, here it is:

Maggie's Fajitas (serves 4)
(seriously, these are not excellent as written but are a good start that could be made better with some adjusting)


1 lb beef round sirloin tip steak, fat trimmed off, cut into thin strips (could use chicken instead)
2 cloves of garlic, minced
2 tablespoons lemon juice (lime works, too)
2 teaspoons cumin
1/4 teaspoon chili powder
1 tablespoon Worcestershire sauce

1 tablespoon cooking oil, divided
2-3 bell peppers (red, green, yellow, orange or a mix), cut in strips
1 onion, cut in rings and then halved
4-8 soft tortillas (I prefer whole wheat)

  1. Place first 6 ingredients in a plastic bag or in a bowl and refrigerate 2 to 24 hours.
  2. In 1/2 tablespoon of oil, stir fry the meat mixture until well cooked, remove and set aside.
  3. In the other 1/2 tablespoon of oil, stir fry peppers and onions until tender.
  4. Add meat mixture back into the pan and stir until heated and blended.
  5. Serve in tortillas - will make enough for 4 super stuffed fajitas or 8 smaller fajitas.
  6. Serve with lowfat refried beans, avocado slices, cheese, salsa, sour cream or even cottage cheese (maybe I'm odd, but I like it)

Calories: 349, Fat: 14g, Cholesterol: 29mg, Sodium: 440mg, Carbs: 39g, Sugars: 3g, Fiber: 8g, Protein: 19g

  3. My daughter loves steak fajitas. I think I'll leave the picture and recipe on the screen. When she gets up (she's 20, won't be out of bed for a few hours yet ...!) she might just think about making them for our dinner ...
